To do this you will require to choose a track type ID in the json to what track it renders as by default. WebOli414 has written a Blender plugin that automates the rendering of sprites for custom tracked rides. There's a couple of downsides - it only works with Blender 2.79 (which is not the latest version), and it is only a renderer - it can't actually write to a .DAT file.
